Story behind the coffee

This is our second batch from Finca Holanda in Garzón, La Plata, grown by José Gregorio Calderón – a producer with over 25 years of experience in coffee farming. His work is characterized by care at every stage, from harvest to storage – and it shows in the cup.

The coffee is a washed Gesha, known for its elegance and aromatic profile. Sr. Calderón ferments the coffee in two stages: first 18 hours in cherries, then 30 hours after depulping, before washing and drying – a method that highlights both floral and fruity notes with a creamy body.

We work with our partners at Osito to source Sr. Calderón’s coffee – a collaboration based on transparency and long-term quality. The result is a delicate and nuanced cup, filled with clementine, orange blossom and berries.

This is how our coffee is made

1. The Origin

The coffee is grown at an altitude of 1,700 meters on Finca Holanda, run by José Gregorio Calderón in Garzón, La Plata, Colombia. The farm has been in his hands for 14 years, but his experience spans two decades.

2. Harvesting & processing

After harvesting, the berries are left to rest in their skins for 18 hours before being pulped and fermented for a further 30 hours. This method, together with careful washing and drying, contributes to the coffee's clean, floral and elegant character.

3. Roasting

The coffee is filter roasted, which highlights the Gesha variety's natural elegance, creamy body and nuanced acidity. A roast profile that preserves every detail of the bean's origin.

4. From soil to cup

The result is a delicate and aromatic coffee with clementine, fresh berries and orange blossom. A cup where every step in the process – from plant to storage – makes a difference.
