Story behind the coffee

This coffee is grown by Sebastian and German Hoyos, two brothers from San Agustín in southern Colombia. Although they didn't grow up on their own farm, their childhood was marked by the presence of coffee – their parents worked as berry pickers, and Sebastian started picking coffee himself as a child.

After years of hard work, investment and sacrifice – including selling their motorbike to buy land – the brothers were finally able to plant their first Pink Bourbon. Inspired by the variety’s high cup quality, they began growing it in partnership with Semilla and the Monkaaba initiative, which empowers small-scale producers and helps them reach out internationally – without intermediaries.

This coffee is the result of their persistence, passion and desire to build something for the future. A lively and fresh cup, full of character.

This is how our coffee is made

1. The Origin

The coffee comes from the Hoyo brothers' plantations in San Agustín, Huila, located at an altitude of between 1,730 and 1,830 meters. The land was purchased in stages and the plantation is a clear example of the family's long-term commitment to quality coffee.

2. Harvesting & processing

The cherries are picked at precise ripeness, every 15 days. They are float-sorted and left to rest for 24 hours in wooden vats, pulped, and then left to dry ferment in tiled tanks for 26 hours. The mass is turned every six hours for even fermentation. The beans are then washed, drained for 12 hours, and finally dried for 15–20 days in the sun.

3. Roasting

This coffee is filter roasted – with a profile that highlights its lively acidity, fresh fruitiness and smooth body. It is a smooth, nuanced coffee with hints of both creaminess and floral notes.

4. From soil to cup

The cup offers notes of green apple, berry yogurt and white chocolate, with a creamy body and floral notes of pink pepper. A coffee that tells a story About persistence, return and hope.
