Story behind the coffee

This is our first purchase from Edilson Cifuentes in Villahermosa, Tolima, and we were immediately captivated by the unique expression of his Geisha. Instead of the classic jasmine profile, this coffee offers floral notes reminiscent of About violet, balanced with honey sweetness and a creamy mouthfeel.

The coffee is grown at an altitude of 1,550 meters and processed with a combination of overripe harvest, 12 hours of resting time in berries, followed by 70 hours of dry fermentation in closed vessels – a process that develops complexity and elegance.

We purchase this coffee through LaREB, a producer-driven initiative that works without intermediaries. As a result, up to 90% of the profits stay in Colombia, directly benefiting producers like Edilson. A new partnership we are very proud of – and a coffee we are happy to share.

This is how our coffee is made

1. The Origin

The coffee is grown by Edilson Cifuentes in Villahermosa, Tolima, at an altitude of 1,550 meters. This is his first export through LaREB, and a clear starting point for a promising collaboration.

2. Harvesting & processing

The cherries are picked overripe for extra sweetness and rested for 12 hours in the fruit skin. They are then fermented for 70 hours in a closed dry state, before being dried in a greenhouse for 15 days – a method that preserves both acidity and floral nuances.

3. Roasting

The coffee is filter roasted, with a light and elegant profile that allows the floral complexity and creamy mouthfeel to be fully expressed.

4. From soil to cup

The taste offers violet flowers, fresh honey and a hint of mint tea – a unique and sophisticated expression of Geisha, with origin, process and craftsmanship in perfect balance.

Story

Swerl föddes ur en gemensam dröm under Beatrix och Daniels tid i Nya Zeeland, där de båda inspirerades av en levande och inkluderande kaffekultur. Tillbaka i Sverige startade de småskaligt – först i en kaffevagn, sedan i en klassisk Mercedes-buss från 70-talet. Denna resande rost inspirerade både namnet och filosofin bakom Swerl: rörelse, nyfikenhet och närhet till människor.

Med Beatrix erfarenhet som sommelier och Daniels tekniska känsla för detaljer tog rosteriet snabbt form. Visionen var tydlig: att rosta kaffe med hjärta och precision, och att skapa något eget – på riktigt.

Idag är Swerl ett etablerat rosteri med en tydlig röst inom svensk specialkaffe. År 2023 uppmärksammades det internationellt när de utsågs till ett av världens 100 bästa rosterier av Roastful – en milstolpe som bekräftar att det går att göra skillnad med små medel, så länge viljan är genuin.
