The story behind Reinaldo Chilito - Colombia

It is an honor to present this micro-lot from Reinaldo Chilito, a grower in the small village of El Purutal in San Agustín, Huila, Colombia. This coffee is an expression of both his life journey and the terroir that has given Pink Bourbon its place on the global specialty coffee map.

Reinaldo grew up at a time when schooling was limited in rural areas. At just nine years old, he began working in agriculture, including with sugarcane and coffee. His first own coffee trees were planted on a quarter hectare of family land. Through work exchanges and frugality, he eventually managed to buy his own land and plant his first 800 Caturra trees.

In 2016, he planted 3,000 Pink Bourbon trees—a crucial step toward quality. Through collaboration with the MonKaaba project, he finally had the opportunity to sell his coffee under his own name, thereby creating a sustainable future for himself and his family.

This lot consists of 100% Pink Bourbon. The coffee cherries are harvested every three weeks and undergo a unique double fermentation: first 24 hours in the cherries, then 24 hours in a ceramic vessel together with the day’s pulp, before being washed and dried for 15–20 days.

The result is an incredibly vibrant and fruity cup with notes of gooseberry, pomelo, hibiscus, and tropical sweetness.

The coffee's process

1. Origin & variety

The coffee is grown by carefully selected producers at high altitudes in Latin America and Africa. We primarily use high-quality Arabica varieties such as Pink Bourbon, Gesha, and SL28 – known for their complex and nuanced flavor profiles.

2. Process

The cherries are handpicked at full ripeness and undergo various processing methods – ranging from washed to natural or anaerobic – to highlight the coffee's unique character. Fermentation and drying take place under controlled conditions to preserve sweetness, balance, and aroma.

3. Roasting & brewing

All coffees are gently roasted to bring out each origin's distinctive flavor notes. Our profiles are tailored for filter, espresso, or boiled coffee – depending on which brewing method you prefer.
