Heating system explained
Main heat source: a boiler
Inside machines like “La Doppia” in the Professional series, there is a Large internal boiler (about 2.5 L).
Boiler function:
- Heats and stores hot water.
- Produces steam for milk frothing.
- Acts as a thermal buffer that keeps the water temperature stable during many brews in a row.
Because the boiler contains a significant amount of hot water, the machine can maintain a stable temperature even when several cups of coffee are brewed consecutively.
Brew head with Heat exchanger
Instead of taking brewing water directly from the boiler, the machine uses a Heat exchanger circuit in the brew head.
The brew group contains:
- a Heat exchanger inside the boiler
- two brass components (“torpedoes”) that form the water channel.
How it works:
- Cold water enters the Heat exchanger channel inside the hot boiler.
- As the water moves through the brass channels, it absorbs heat from the boiler water around it.
- By the time it reaches the brew head, it has the right temperature for espresso extraction.
This design ensures:
- rapid heating of incoming water
- even brewing temperature
- stable extraction even with multiple brews in a row.
Heavy brass brew group for thermal stability
The machines use brew groups made of treated brass.
Why brass is important:
- High thermal mass → retains heat very well.
- Minimizes temperature fluctuations.
- Helps create even crema and stable extraction.
This keeps the brew head temperature stable even when several espressos are brewed quickly one after another.
Thermostat control
The temperature is controlled by a thermostat (often around 93–95 °C) that switches the heating element in the boiler on and off.
This maintains the correct temperature range for:
- espresso extraction
- steam production.
Modular heating per brew group
The professional machines are designed with modular brewing units, where each group uses about 400 W.

Step-by-step explanation
1. Water enters the system
Water from the tank is pushed by a vibration pump (~15 bar) towards the brewing system.
2. The Boiler creates the heat
Inside the machine is a Boiler heated by an electric heating element.
The water in the Boiler is kept around 93–95 °C using a thermostat.
This Boiler water is not the same water used to brew the coffee.
3. Heat exchanger inside the Boiler
A tube (Heat exchanger) runs through the hot Boiler water.
Fresh brewing water flows through this tube and absorbs heat from the surrounding Boiler water.
This design ensures:
- even heating
- stable temperature before extraction.
In the Aroma group design:
- the Heat exchanger contains two brass “torpedoes”
- they form the internal water channel inside the Boiler.
4. Brass brew head stabilizes temperature
The heated water reaches the heavy brass brew group, which acts as a thermal buffer.
Brass stores heat very efficiently, which means the brewing temperature remains stable even during several consecutive brews.
5. Espresso extraction
Water at brewing temperature passes through:
- coffee pod / coffee puck
- portafilter
→ and espresso is extracted.
6. Pressure relief
After brewing:
- a solenoid valve opens
- excess water is directed to the drip tray instead of dripping through the coffee.

The Boiler produces the heat, while fresh water is heated indirectly as it passes through the Heat exchanger.
