Commercial grinder: care, timer and service

A commercial grinder grinds many kilos a week. The routines are similar to those for a home grinder, but the intervals are shorter and the burrs wear faster. Below, we base our advice on Macap (M7D, MXD), Eureka (Helios 80, Atom W 75), the Mahlkönig X54 and BUNN MHG.

Daily routine

  • Brush away coffee around the spout, the fork and the drip tray.
  • Empty the bean hopper and wash it by hand with mild washing-up liquid. Bentwood (H75) specifies daily, Eureka at least once a week. Macap: never in the dishwasher.
  • Wipe the body with a damp cloth. Avoid the power switch.
  • Cleaning pellets weekly under heavy use. Urnex Grindz: one capful (35-40 g) for espresso grinders, two (70-80 g) for retail grinders. Then grind a portion of coffee and discard it. Cafetto GC2 also works.

BUNN MHG: wipe the outside every week. Every six months, empty the hoppers, take the grinder housing apart and brush it with a dry, stiff non-metallic brush, and replace the dechaffer plate.

Timer per dose

On-demand grinders dose by time. When you change the grind setting or beans, the amount per second changes, so check the dose with a scale every morning.

  • Macap M7D/MXD: hold down the selection button for 10 seconds after start-up to enter programming. Three doses can be set, in steps of 0.05 s.
  • Eureka Helios and Atom: select the dose and change it with plus and minus in steps of 0.05 s. The Atom W 75 can also grind by weight, see Grinder with a scale.
  • Mahlkönig X54: up to four recipes, maximum 90 seconds.
  • BUNN MHG: three batch sizes per hopper, set with plus and minus in the menu.

Overheating

Long queues can overheat the motor. Macap has a thermal motor cut-out: unplug the grinder and wait at least an hour before starting it again. The Mahlkönig X54 can handle at most 10 s on and 50 s rest. Never block the grinder's fan or ventilation. If the protection trips often, check that the burrs are not worn, as dull burrs need a longer grind time.

Replacing burrs by kg

  • Eureka Helios 80: 250 kg. The display shows a replacement reminder; the grinder still works, but the results get worse.
  • Eureka Atom W 75: 500 kg.
  • Mahlkönig X54: E010 is shown when the burrs are worn.
  • BUNN MHG: inspect and replace if necessary at the annual service. The burr warranty covers 4 years or 40,000 lb (about 18,000 kg).
  • Macap M7D: new conical burrs need about 1 kg of running in.

Work out your consumption: 2 kg a day adds up to 250 kg in about four months. More in Replacing the burrs on your grinder.

Service

Macap, Eureka and BUNN state that maintenance should be carried out by trained personnel using original parts. Plan burr replacement and an inspection together with servicing of the espresso machine, see Commercial espresso machine: daily cleaning and service. Call a technician if the motor smells burnt, the grinder trips despite resting or there is scraping between the burrs.
