The story behind La Guaca - Costa Rica

La Guaca is one of the most highly regarded coffees from Café Rivense, a family-owned micromill run by the Ureña Rojas family in the Chirripó region of Costa Rica. The farm is located high in the rolling mountains, between 1,300 and 1,825 meters above sea level, where coolness and rich biodiversity create perfect conditions for complex and elegant flavors.

Café Rivense was founded in 2005 by Régulo Ureña and Isabel Rojas, and is today run by the entire family – sons Ricardo, Mario, Esteban and Luis – who together are responsible for everything from harvest to export.

What distinguishes their work is sustainability, precision and innovation. They analyze the soil annually, use minimal water and protect the biodiversity of their lands.

The La Guaca process, with Sealed Fermentation Red Honey, produces a coffee with incredible clarity, tropical fruitiness and floral undertones – a taste experience that reflects the family's passion and craftsmanship.

Coffee's process

1. Origin & farm
The coffee is grown by the Ureña Rojas family on the La Guaca farm in Chirripó, Costa Rica. The high altitude and cool microclimate give the beans a slow ripening process and complex flavor development.
2. Process
Through Sealed Fermentation Red Honey, the coffee berries are fermented in closed tanks under controlled conditions, before being slowly dried with parts of the pulp remaining. The result is a balanced cup with distinct sweetness, tropical notes and floral notes.
3. Brewing
Roasted for filter brewing – use a medium grind and approximately a 1:16 brew ratio to bring out the coffee’s lively fruitiness and elegant balance
