The story behind Hacienda Sonora SL28 - Costa Rica

Hacienda Sonora is one of Costa Rica's most renowned farms and is located in the heart of the Central Valley. It is run by Alberto and Diego Guardia, who for over a century have managed the farm's heritage and developed innovative processing methods to bring out the best in each coffee bean variety.

This SL28 variant is grown at altitudes between 1,300 and 1,825 meters, surrounded by 20 hectares of protected forest reserve that contribute to a unique microclimate and preserved biodiversity.

The coffee is naturally dried on the farm's patios for nine days, then rested for three days, and finished with mechanical drying for perfect consistency. The result is a cup with complex fruitiness, distinct berry sweetness, and an elegant floral note – a coffee that shows why Hacienda Sonora is synonymous with quality and sustainability.

Coffee's process

1. Origin & Farm
The coffee is grown at Hacienda Sonora in Costa Rica's Central Valley – a region known for its high-altitude climate and fertile soils. The farm is run by Alberto and Diego Guardia, who combine tradition and innovation with a focus on sustainable production.

2. Process
Natural process – ripe cherries are handpicked and dried whole on patios for about nine days before resting and finishing drying mechanically. This method gives the coffee an intense fruitiness and natural sweetness.

3. Brew
Roasted especially for filter brew. Brew with V60, Kalita, or electric brewer for a clean and juicy cup where the berry notes and candied orange come to the fore.
