The history of Fazenda Chapadão began with Mr. Ciro, who dedicated himself to raising cows for milk production. His sons, Gustavo and Rodrigo, helped whenever possible, while also studying in the city. Ciro already had a small coffee plantation, but he leased it because he didn't have time to work on it due to the exhausting routine of milk production, which took up the whole day, seven days a week, and wasn't very profitable. When Gustavo finished his studies and returned to the farm in 2014, they both decided to dedicate themselves exclusively to coffee cultivation.


They sold all the cows and expanded the plantation. In 2018, Rodrigo decided to leave his job in the city and also joined the farm. Since then, the family has been committed to seeking coffee quality, adopting new post-harvest methods and investing in new varieties. They cultivate the Catiguá, Yellow Bourbon, Paraiso, and Yellow Catuaí varieties. The coffee is stored in its husk, which prolongs and improves its quality. A sustainable practice adopted is the cultivation of Brachiaria (cow feed) between the coffee plants, as it enriches the soil with the organic material produced, reduces erosion, controls nematodes (small insects that live in the roots of coffee plants and consume fertilizers), and protects young plants against the wind. As a result of their dedication, Fazenda Chapadão has stood out in the production of specialty coffees, receiving quality awards. To further strengthen the business, the family opened a roasting shop on the farm, deepening their knowledge of coffee and ensuring an authentic and affordable product. The family shares one main purpose: to make specialty coffees more accessible and allow more people to enjoy exceptional quality coffee.





The story behind Fazenda Chapadão - Brazil (3rd Place Cup of Excellence Natural Category)

Danilo Sanchez is a third-generation coffee farmer from El Paraíso, Honduras. He started young, helping his father in the fields, and after inheriting his first plot of land in 2009, he has steadily expanded his work to cover five hectares of coffee cultivation. His passion for quality drives him forward despite tough conditions, such as labor shortages and the effects of climate change.

Danilo produces coffee with both tradition and innovation – every step from harvest to drying is carried out with the utmost care. It is a passion he shares with his family, and every cup carries a piece of their work, hope, and future.

This batch is exclusively selected by **Semilla Coffee** – a company that works closely with producers to create long-term partnerships focused on transparency, sustainability, and quality.

The coffee is roasted by Swedish **Swerl Coffee Roasters**, who skillfully and respectfully highlight every nuance in the cup, honoring the terroir and the producer’s work. The result is an expressive coffee with character and depth, conveying both place and person.

The coffee's process

1. Origin & variety

This coffee is grown in Delicias, El Paraíso – a fertile region in southeastern Honduras – on Danilo Sanchez's farm *Los Cedro*. The Parainema variety is known for its resilience and tropical flavor notes.

2. Process

After careful handpicking, the coffee cherries undergo anaerobic fermentation for 50 hours in tightly sealed plastic bags. They are then dried for 20–25 days under a plastic cover that protects against moisture and temperature fluctuations. This creates a clean, powerful, and fruity flavor profile.

3. Roasting & brewing

Roasted by **Swerl Coffee Roasters** in Sweden with precision and respect for the raw material. It is optimized for filter brewing – whether you use V60, Aeropress, or batch brewers – and offers Large aroma, distinct fruitiness, and elegant structure.
