A sweet and syrupy filter coffee from El Paraíso, Honduras – with a round body, tropical fruitiness and a long aftertaste. Produced by Danilo Sánchez on the Los Cedro family farm. This coffee has notes of BROWN SUGAR SYRUP, BLOOD ORANGE PEEL, TROPICAL FRUIT.

The story behind Danilo Sanchez - Honduras

This coffee comes from Danilo Sánchez and his family in Delicias, El Paraíso, Honduras. Danilo is a third-generation coffee farmer and has been growing coffee since a young age with his father. In 2009, he was given his first plot of land, where he planted his first coffee bushes. Today, he grows five hectares, driven by both tradition and a genuine love for coffee.

The coffee is of the Parainema variety and has undergone a 50-hour anaerobic fermentation, which contributes to its deep sweetness and complex fruitiness. We purchase this lot through Semilla, an operator that supports producers in the area and focuses on sustainable direct trade.

Danilo expresses his gratitude to everyone who buys his coffee – every cup makes a difference to his family’s future. This is a coffee that conveys passion, craftsmanship and hope.

Coffee's process

1. The Origin

The coffee is grown by Danilo Sánchez on the Los Cedro farm in El Paraíso, Honduras, at an altitude of between 1,350 and 1,500 meters. Danilo has built his farm from scratch and continues to improve quality every year despite challenges such as climate change and labor shortages.

2. Harvesting & processing

The berries are picked at optimal ripeness and then undergo a 50-hour anaerobic fermentation in sealed plastic bags. The berries are then depulped and dry fermented for a further 38 hours, before being slowly dried for 20–25 days under plastic-protected sunlight for temperature control.

3. Roasting

The coffee is filter roasted, with a focus on preserving the syrupy sweetness, blood orange freshness and tropical notes. The result is a rich and balanced cup with a long, pleasant aftertaste.
