The story behind Carlos Cadena - Mexico

This is Swerl Coffee Roasters' first coffee from Mexico – a clear testament to the country's potential in modern specialty coffee production. The coffee is produced by Carlos Cadena, a fifth-generation coffee grower in Cosautlán, Veracruz. His family's history with coffee dates back to the 1890s, when his great-great-grandfather processed coffee cherries in simple wooden tubs.

After a coffee rust outbreak in the region around 2013–2014, the Cadena family had to rethink their approach. Together with his father, Carlos began exploring more scientifically grounded cultivation and processing methods. The result was higher quality, better yields, and a clear focus on specialty coffee.

Carlos is driven by curiosity and precision. He cups coffee daily and started as early as 2018 to separate lots by variety and process to understand how each variable affects the flavor. His work has earned international recognition: third place in the Cup of Excellence Mexico 2023 and first place in the experimental category at the 2024 auction.

Sustainability is a natural part of his work. Through composting pulp, reusing residual materials, and his own water recycling systems, Carlos combines quality with long-term environmental responsibility.

The coffee's process

1. Origin & Producer

The coffee is grown by Carlos Cadena in Cosautlán, Veracruz, at an altitude of about 1,400 meters. The region offers a warm but balanced climate that is well suited for fruit-driven coffees.

2. Process

The coffee is natural processed, meaning the cherries are dried whole with the pulp intact. This results in intense fruitiness, deep sweetness, and a distinct berry character in the cup.

3. Brewing

Roasted for filter brewing. Perfect for manual brewers like V60 and Kalita, where the coffee’s fruitiness, cocoa, and balanced acidity are fully expressed.
