Story behind the coffee

Los Lajones Honey is an exclusive coffee from Los Lajones Estate in Boquete, Panama, grown by Graciano Cruz Rubio and Landero – two legends in sustainable and quality-driven coffee production.

The coffee is of the Catuai variety and is grown on volcanic soil at altitudes between 1,750 and 2,300 meters, which produces denser and more flavorful beans.

It has been processed with a honey process – where some of the fruit sugar is left during drying to develop extra sweetness and softness in the flavor.

The result is a cup with notes of chocolate, orange, apricot, and brown sugar, low acidity, and a clean, smooth, and balanced mouthfeel.

Roasted by Budhas Kafferosteri in a Giesen W15, with an Agtron value of 73.9, which highlights the coffee's natural sweetness and silky body.

1. Origin & Estate

The coffee comes from Los Lajones Estate in Boquete, Panama, an area known for its high-altitude cultivation and volcanic soils that provide extra mineral richness to the beans.

2. Process

Honey process – a method where the beans are dried with parts of the fruit flesh left on, creating a naturally sweet and creamy flavor profile with low acidity and a round body.

3. Roasting & Brewing

Roasted by Budha in a Giesen W15 with a light to medium roast profile (Agtron 73.9), perfect for hand filter brewing such as V60, Kalita and Pour over.
